These bread recipes are from my collection of large batch commercial baking recipes that I have used professionally over the years and broken down into home baking size recipes using volume measure instead of commercial weight measure for easier use in the home. These recipes have all been home kitchen tested with standard home baking kitchen ovens and I have had remarkably great results.
